Ingredients

Main Ingredients

  • 2 pounds boneless skinless chicken thighs cut into chunks
  • 4 cups chicken broth or stock
  • 3 Yukon gold potatoes cubed
  • 3 carrots sliced
  • 2 celery stalks chopped
  • 1 onion diced
  • 4 cloves garlic minced
  • 2 bay leaves remove before serving
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste
  • 3 tablespoons cornstarch mixed with cold water
  • 1 cup frozen peas optional

Instructions

  • Prep and chop all ingredients.
  • Layer potatoes, veggies, and chicken in slow cooker.
  • Add seasonings and broth, then cover.
  • Cook on LOW for 6–8 hours or HIGH for 3–4.
  • Add cornstarch slurry and peas; finish cooking 30 min.
  • Stir in herbs, adjust seasoning, and serve warm.
