Ingredients

Main Ingredients

  • 2 lbs boneless skinless chicken breasts or thighs
  • 1 cup pineapple chunks fresh or canned, drained
  • 1 red bell pepper sliced
  • 1 green bell pepper sliced
  • 1 yellow onion sliced
  • 3 garlic cloves minced

Sweet Hawaiian Sauce

  • ½ cup pineapple juice fresh or canned
  • 0.33 cup brown sugar packed
  • ¼ cup soy sauce low sodium preferred
  • 2 tablespoon apple cider vinegar
  • 1 tablespoon sweet chili sauce
  • 1 teaspoon ground ginger
  • ½ teaspoon red pepper flakes optional
  • 1 tablespoon tomato paste for depth (optional)
  • 1 teaspoon honey glossy finish (optional)

To Thicken

  • 2 tablespoon cornstarch
  • 2 tablespoon water cold, to make slurry

Garnish (optional)

  • 2 green onions sliced
  • 1 tablespoon sesame seeds
  • fresh cilantro chopped

Instructions

  • Chop chicken, slice vegetables, and mix sauce
  • Add chicken, veggies, sauce, and pineapple to crockpot
  • Cook on LOW 4–5 hrs or HIGH 2–3 hrs
  • Stir in cornstarch slurry to thicken
  • Let rest 10 min; garnish and serve
