Equipment

  • 1 Large skillet or cast iron pan
  • 1 Large pasta pot
  • 1 Wooden spoon or spatula
  • 1 Fine mesh strainer or colander
  • 1 Microplane grater (for Parmesan and garlic)

Ingredients

For the Steak

  • 1 lb sirloin steak
  • 2 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • salt and pepper to taste

For the Pasta & Sauce

  • 12 oz penne or rigatoni pasta
  • 4 cloves garlic minced
  • 1 cup heavy cream
  • 0.75 cup freshly grated Parmesan cheese
  • 2 tablespoon honey
  • 1 teaspoon red pepper flakes
  • 3 tablespoon butter
  • 0.25 cup fresh parsley chopped
  • 1 tablespoon lemon juice

Instructions

  • Cut steak into bite-sized pieces and season with garlic powder, smoked paprika, salt, and pepper.
  • Bring a pot of salted water to boil and cook pasta until al dente. Reserve pasta water before draining.
  • Heat olive oil in a skillet and sear steak pieces 2–3 minutes per side until browned. Remove and let rest.
  • In the same skillet, add butter, minced garlic, and red pepper flakes. Cook briefly, then stir in cream and honey. Simmer.
  • Remove skillet from heat; whisk in Parmesan and lemon juice until smooth.
  • Toss pasta in sauce, adding pasta water as needed. Fold in rested steak and juices.
  • Garnish with chopped parsley and serve warm.
