Ingredients

Main Ingredients

  • 4 slices Bread whole wheat, sourdough or white
  • 2 cups Fresh spinach packed
  • 4 slices Cheese cheddar, mozzarella or Swiss
  • 2 tablespoon Butter or olive oil for toasting and sautéing
  • 1 small Onion finely chopped
  • 2 cloves Garlic minced
  • Salt and pepper to taste
  • Red chili flakes optional, for a spicy kick
  • 0.5 cup Corn kernels optional
  • 1 small Tomato thinly sliced
  • 0.25 cup Bell peppers diced, optional

Instructions

  • Sauté onion, garlic, and spinach.
  • Season the filling with salt, pepper, and chili flakes (if using).
  • Assemble sandwich with cheese, sautéed filling, tomato, and other vegetables if using.
  • Toast sandwich on skillet with butter or oil until golden and crispy, pressing slightly.
  • Slice and serve warm.
