  • 1 Cast iron skillet or heavy-bottom pan
  • 1 Wooden spoon
  • 1 Sharp knife

Ingredients

  • 2 lb Beef chuck or sirloin Cut into 1-inch cubes
  • 2 lb Baby potatoes Halved if large
  • 1 Medium onion Diced
  • 6 cloves Garlic Minced
  • 4 tablespoon Butter Divided
  • 1 cup Beef broth
  • 2 tablespoon Worcestershire sauce
  • 1 tablespoon Fresh rosemary Chopped, or 1 teaspoon dried
  • 1 tablespoon Fresh thyme Chopped, or 1 teaspoon dried
  • 1 teaspoon Paprika
  • To taste Salt and pepper
  • 2 tablespoon Fresh parsley Chopped, for garnish

Instructions

  • Pat beef dry, season with salt and pepper, and brown in butter in batches.
  • Sauté onions and garlic in remaining butter, add broth and Worcestershire, simmer, pour over beef.
  • Add potatoes, tuck around beef, sprinkle herbs and paprika, and stir gently.
  • Cover and cook on LOW 7–8 hrs or HIGH 3–4 hrs, until beef is tender and potatoes are soft.
  • Adjust seasoning, garnish with parsley, and serve warm.
