Ingredients

  • 150 g guanciale cut into matchsticks
  • 100 g Pecorino Romano finely grated
  • 4-5 large egg yolks room temperature

Instructions

  • Slice guanciale; whisk egg yolks, Pecorino, and pepper.
  • Cook guanciale until crispy; boil pasta.
  • Toss pasta with guanciale and fat off heat.
  • Stir in egg-cheese mix; add pasta water for creamy sauce.
