Ingredients

  • 1 large head green cabbage about 2–3 pounds
  • 3 tablespoon olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder

Optional Seasonings

  • ½ teaspoon paprika
  • ¼ teaspoon red pepper flakes
  • 2 tablespoon balsamic vinegar for glaze at the end
  • Fresh herbs thyme, rosemary, parsley

Instructions

  • Preheat oven to 425°F (220°C).
  • Slice Cabbage – Cut cabbage into ¾-inch thick steaks, keeping core intact.
  • Season – Brush both sides with olive oil, sprinkle with salt, pepper, garlic powder (and optional spices).
  • Roast – Place on parchment-lined sheet, roast 15 minutes.
  • Flip – Carefully flip, roast another 12–15 minutes until golden brown edges.
  • Finish – Optional: brush with balsamic glaze in last 3 minutes.
