Ingredients

  • ½ large English cucumbers Washed, ends trimmed, cut into chunks
  • 4-5 large Lemons Enough for ¾ cup lemon juice, juiced
  • 12-15 leaves Fresh mint Optional – for mint variation
  • 0.5 cup Granulated sugar Or substitute with honey
  • 4 cups Cold water Filtered
  • 1 cup Ice cubes For chilling
  • 1 pinch Sea salt Enhances flavor

Instructions

  • Blend chopped cucumbers until smooth.
  • Strain cucumber juice into a pitcher.
  • Juice lemons and strain out seeds and pulp.
  • Mix cucumber and lemon juices together.
  • Dissolve sugar in warm water and stir into the pitcher.
  • Add remaining cold water and a pinch of sea salt.
  • Add ice cubes and stir gently.
  • Refrigerate for 30 minutes before serving.
  • Serve over ice with mint and citrus garnish.
