Ingredients

For the Chicken

  • 1 pound boneless, skinless chicken thighs cut into bite-sized pieces
  • 2 tablespoon vegetable oil
  • 1 teaspoon garlic powder
  • salt and pepper to taste

For the Stir Fry

  • 2 packages instant ramen noodles 3 oz each, seasoning packets discarded
  • 1 red bell pepper julienned
  • 1 cup broccoli florets
  • 1 medium carrot thinly sliced
  • 3 green onions separate white and green parts
  • 3 cloves garlic minced
  • 1 tablespoon fresh ginger grated

For the Sauce

  • 3 tablespoon soy sauce
  • 2 tablespoon hoisin sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon sriracha adjust to taste
  • 1 tablespoon rice vinegar
  • 1 teaspoon brown sugar

For Garnish

  • 1 tablespoon sesame seeds
  • green onions chopped tops
  • red pepper flakes optional

Instructions

  • Chop chicken, slice vegetables, and mix sauce ingredients in a small bowl.
  • Cook chicken in oil over medium-high heat until golden and cooked through.
  • Stir fry bell pepper, broccoli, carrot, garlic, and ginger until just tender.
  • Boil ramen noodles according to package, drain well.
  • Combine chicken, noodles, and sauce in skillet; toss to coat and heat through.
  • Top with sesame seeds, chopped green onions, and optional red pepper flakes.
