Ingredients

  • 4 large eggs for creaminess
  • 1 egg yolk optional, for extra richness
  • ½ cup lemon juice freshly squeezed
  • ½ cup granulated sugar
  • ¼ cup unsalted butter cut into pieces
  • 2 tablespoon lemon zest about 2 lemons
  • 1 pinch salt

Instructions

  • In a saucepan, whisk eggs until smooth, then add sugar, lemon juice, zest, and salt.
  • Cook over medium-low heat, stirring constantly until the mixture thickens.

  • Strain the curd through a fine-mesh sieve into a clean bowl.
  • Press plastic wrap on top and chill for 30 minutes in the fridge.
