Ingredients

  • 1 lb rotini pasta or penne pasta
  • 6 oz mini pepperoni slices
  • 8 oz mozzarella cubes or string cheese, cubed
  • 1 cup cherry tomatoes halved
  • ½ cup black olives sliced
  • 1 green bell pepper diced
  • ½ red onion finely chopped
  • 0.75 cup Italian dressing use high-quality for best flavor
  • 2 tablespoon grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • ½ teaspoon garlic powder
  • salt and pepper to taste
  • ¼ cup fresh basil optional, chopped
  • 2 tablespoon pine nuts optional, lightly toasted
  • ¼ cup sun-dried tomatoes optional, chopped

Instructions

  • Boil pasta until al dente.
  • Drain and rinse pasta with cold water.
  • Dice and prep all toppings.
  • Whisk dressing ingredients together.
  • Combine pasta, toppings, and dressing.
  • Chill in fridge before serving.
