Ingredients

  • 2 shots espresso or ½ cup strong brewed coffee
  • 1 cup full-fat canned coconut milk
  • 0.5 cup ice cubes
  • 1 tablespoon beetroot powder or pink pitaya powder
  • 1 teaspoon maple syrup or agave syrup
  • 0.25 teaspoon vanilla extract
  • 1 pinch sea salt

Instructions

  • Brew your espresso or coffee.
  • Cool – Let it cool to room temperature.
  • Whisk – Mix coconut milk with beetroot powder, maple syrup, vanilla, and salt.
  • Strain – Strain the mixture if needed to remove lumps.
  • Fill – Add ice to a glass and pour in the cooled coffee.
  • Layer – Slowly pour in the pink coconut mixture.
  • Stir – Stir gently to mix (or keep it layered).
  • Serve – Enjoy immediately!
