Ingredients

For the Oat Base and Crumble Topping

  • 2 cups Old-fashioned rolled oats
  • cups All-purpose flour Can substitute with oat flour for gluten-free
  • ¾ cup Brown sugar (packed)
  • ½ cup Unsalted butter Melted; can use coconut oil for vegan
  • 1 teaspoon Vanilla extract
  • ½ teaspoon Salt
  • ½ teaspoon Cinnamon

For the Mango Filling

  • 3 large Ripe mangoes Diced (about 3 cups)
  • cup Granulated sugar
  • 2 tablespoon Cornstarch For thickening the mango juices
  • 1 tablespoon Lemon juice Enhances flavor, helps balance sweetness
  • ½ teaspoon Vanilla extract

Instructions

  • Preheat oven & prepare pan
  • Mix dry oat ingredients
  • Add butter & vanilla; stir to crumb texture
  • Toss mango with sugar, lemon & vanilla
  • Stir in cornstarch after juices release
  • Press base into pan & layer mango filling
  • Sprinkle top crumble & bake
  • Cool completely before slicing
