  • 1 Whisk
  • 2 Mixing bowls
  • 1 tablespoon Cookie scoop
  • 1 Skillet
  • 1 Cooling rack
  • 1 Non-stick cooking spray

Ingredients

  • 1 ½ cups all-purpose flour
  • 2 tablespoon granulated sugar
  • 2 teaspoon baking powder
  • ½ teaspoon salt
  • 1 cup milk or almond milk
  • 1 egg
  • 2 tablespoon melted butter or coconut oil
  • ¼ cup pure maple syrup
  • ½ teaspoon vanilla extract
  • 12 oz breakfast sausage cooked and crumbled
  • 1 cup shredded cheddar cheese optional but recommended
  • cooking spray for muffin tin
  • extra maple syrup for dipping

Instructions

  • Preheat oven to 375°F and grease mini muffin tin.
  • Cook sausage until browned; set aside.
  • Whisk dry ingredients in one bowl.
  • Combine wet ingredients in another bowl.
  • Combine wet and dry until just mixed.
  • Fill muffin cups ⅓ with batter, add sausage and cheese, then top with more batter.
  • Bake 12–15 min until golden.
  • Cool 3 min, remove, and brush with warm syrup.
