Ingredients

all-purpose flour

granulated sugar

baking powder

salt

milk
or almond milk

egg

melted butter
or coconut oil

pure maple syrup

teaspoon
vanilla extract

breakfast sausage
cooked and crumbled

shredded cheddar cheese

cooking spray
for muffin tin
extra maple syrup
for dipping
Instructions
Preheat oven to 375°F and grease mini muffin tin.
Cook sausage until browned; set aside.
Whisk dry ingredients in one bowl.
Combine wet ingredients in another bowl.
Combine wet and dry until just mixed.
Fill muffin cups ⅓ with batter, add sausage and cheese, then top with more batter.
Bake 12–15 min until golden.
Cool 3 min, remove, and brush with warm syrup.
