Ingredients

  • 4 fillets Salmon fillets (6 oz each) skin-on preferred
  • 2 tablespoons Olive oil For searing
  • 3 tablespoons Butter For sauce and richness
  • 4 cloves Garlic Minced
  • Salt & Pepper To taste
  • 1 teaspoon Italian seasoning Divided
  • ½ teaspoon Red pepper flakes Adjust to heat preference
  • 1 cup Heavy cream For the sauce
  • ½ cup Chicken broth Adds depth
  • cup Sundried tomatoes Chopped
  • ½ cup Parmesan cheese Freshly grated
  • 2 tablespoons Fresh basil Plus more for garnish
  • 2 cups Fresh spinach Optional but recommended
  • 1 tablespoon All-purpose flour For thickening the sauce

Instructions

  • Pat salmon dry and season
  • Sear salmon skin-side down
  • Flip and cook until mostly done
  • Remove salmon, tent with foil
  • Add butter and garlic to skillet
  • Stir in flour and whisk
  • Add broth, cream, seasoning
  • Stir in sundried tomatoes and cheese
  • Wilt spinach, return salmon
  • Spoon sauce over salmon and serve
