  • ½ teaspoon Black pepper freshly ground
  • 2 cups Sharp cheddar cheese shredded, divided
  • 1 pound Bacon cooked crispy and crumbled
  • 4 Green onions chopped
  • ½ cup Sour cream for topping
  • 1 cup Cream cheese optional, for extra creaminess
  • 1 packet Ranch seasoning mix optional
  • 1 Jalapeños diced, optional

Instructions

  • Boil potatoes until tender, then drain.
  • Mash potatoes with butter, milk, sour cream, and seasonings until creamy.
  • Stir in 1 cup cheese, half the bacon, green onions, and any optional mix-ins like cream cheese or ranch seasoning.
  • Transfer to a 9x13-inch baking dish. Top with remaining cheese and bacon.
  • Bake at 350°F for 25–30 minutes until golden and bubbling. Cool for 10 minutes before serving.
