Equipment

  • 1 9-inch springform pan
  • 1 Large roasting pan
  • 1 Electric mixer (stand or hand)
  • 1 Aluminum foil
  • 1 Rubber spatula

Ingredients

For the Crust

  • 24 cookies Chocolate sandwich cookies (like Oreos) Crushed
  • 4 tablespoon Butter, melted
  • 2 tablespoon Granulated sugar

For the Cheesecake Filling

  • 24 oz Cream cheese Softened to room temp
  • 0.75 cup Granulated sugar
  • 3 large Eggs Room temp
  • 0.5 cup Sour cream
  • 0.33 cup Unsweetened cocoa powder
  • 2 packets Hot chocolate mix (1.25 oz each)
  • 1 teaspoon Vanilla extract
  • 0.25 teaspoon Salt

For the Topping

  • 1 cup Heavy whipping cream
  • 2 tablespoon Powdered sugar
  • 1 cup Mini marshmallows
  • Chocolate shavings For garnish

Instructions

  • Preheat oven to 325°F. Wrap pan with foil.
  • Mix cookies, butter, and sugar. Press into pan. Bake crust.
  • Beat cream cheese, add sugar, then eggs one by one.
  • Add sour cream, cocoa, hot chocolate mix, vanilla, and salt.
  • Pour filling over crust. Place pan in water bath.
  • Bake 55–65 minutes until center jiggles slightly.
  • Cool in oven 1 hour. Run knife around edge.
  • Chill 4 hours or overnight.
  • Whip cream with sugar, top with marshmallows and chocolate.
