Ingredients

  • lb Ground beef (80/20) Keeps casserole moist and flavorful
  • 4–5 Russet potatoes Thinly sliced
  • 1 Large onion Diced
  • 2 cup Cheddar cheese Shredded
  • 1 can Cream of mushroom soup Substitute with cream of chicken if desired
  • Salt and black pepper To taste, for seasoning
  • 1 teaspoon Garlic powder
  • 1 teaspoon Paprika Optional, for color and subtle smokiness

Instructions

  • Preheat oven to 375°F.
  • Slice potatoes thin and dice onion.
  • Season ground beef with salt, pepper, garlic powder, and paprika.
  • In a 9x13-inch baking dish, layer half the potatoes, then onions, then seasoned ground beef. Repeat the layers if necessary.
  • Spread cream of mushroom soup evenly over the top and sprinkle with shredded cheddar cheese.
  • Cover the dish tightly with aluminum foil and bake for 45 minutes.
  • Remove foil and bake for an additional 15–20 minutes until cheese is bubbly and golden.
  • Let the casserole rest for 10 minutes before serving.
