Instructions
Heat oven to 350°F (175°C) and line tray with parchment.
Soak raisins 10 minutes in warm water, then pat dry.
Mix coconut oil, honey, egg, vanilla, and milk.
Combine oats, flour, baking soda, salt, cinnamon, and nutmeg.
Stir raisins into dry mixture.
Mix wet and dry until just combined.
Drop spoonfuls of dough onto tray, 2 inches apart.
Bake 12–15 minutes until edges are golden.
Rest on tray 5 minutes, then transfer to wire rack to cool.
