Ingredients

  • 2 cups Old-fashioned rolled oats for chewy texture
  • ½ cup Natural peanut butter almond butter works too
  • cup Coconut oil solidifies cookies
  • cup Honey or maple syrup natural sweetener
  • ¼ cup Unsweetened cocoa powder chocolate flavor
  • ¼ cup Milk of choice dairy or plant-based
  • 1 teaspoon Vanilla extract enhances flavor
  • 1 pinch Sea salt balances sweetness
  • 2 tablespoon Chia seeds or flaxseed optional
  • ¼ cup Mini chocolate chips optional
  • ¼ cup Shredded coconut optional
  • 2 tablespoon Hemp hearts optional

Instructions

  • Line baking sheet with parchment paper.
  • Melt coconut oil, honey, cocoa, and milk in saucepan.
  • Boil for exactly 2 minutes, stirring constantly.
  • Remove from heat, stir in peanut butter, vanilla, and salt.
  • Fold in oats (and optional mix-ins) until coated.
  • Drop spoonfuls on sheet and flatten slightly.
  • Chill for 30 minutes until firm.
