Ingredients

Base Ingredients

  • 1 cup raw cashews soaked for 2 hours or overnight
  • 1 cup plain Greek yogurt 0% fat
  • 1 cup unsweetened almond milk
  • 0.75 cup freshly grated Parmesan cheese
  • 3 cloves garlic minced
  • 2 tablespoons nutritional yeast
  • 1 tablespoon lemon juice
  • 1 teaspoon dried Italian herbs
  • 0.5 teaspoon sea salt
  • 0.25 teaspoon white pepper
  • 2 tablespoons olive oil

Optional Add-ins

  • 0.25 cup fresh basil chopped
  • 2 tablespoons fresh parsley
  • 1 tablespoon fresh thyme

Instructions

  • Blend Base – Drain and rinse soaked cashews, blend with almond milk until smooth.
  • Sauté Garlic – Heat olive oil, sauté garlic until fragrant, whisk in cashew cream.
  • Add Cheese – Remove from heat, whisk in yogurt, Parmesan, seasonings until creamy.
  • Serve – Adjust seasoning, thin with almond milk if needed, serve over pasta with herbs.
