Instructions
Wash and chop all vegetables, prepare spices and set aside.
Heat oil in a large skillet and brown the ground turkey with salt, pepper, cumin, and paprika.
Remove turkey; in the same skillet, sauté onion, garlic, red pepper, then zucchini.
Add cherry tomatoes and oregano. Stir in turkey. Heat through.
Stir in optional corn and beans, top with basil and Parmesan.
