Ingredients

Main Ingredients

  • 1 lb lean ground turkey 93/7 lean-to-fat ratio
  • 2 medium zucchini sliced into half-moons
  • 1 medium yellow onion diced
  • 3 cloves garlic minced
  • 1 red bell pepper chopped
  • 1 cup cherry tomatoes halved

Seasonings & Flavor Enhancers

  • 2 tablespoon olive oil divided
  • 1 teaspoon dried oregano
  • 1 teaspoon ground cumin
  • 0.5 teaspoon paprika
  • 0.5 teaspoon salt or to taste
  • 0.25 teaspoon black pepper
  • 0.25 teaspoon red pepper flakes optional

Optional Add-ins

  • 0.5 cup corn kernels fresh or frozen
  • 0.5 cup black beans drained, rinsed
  • 0.25 cup fresh basil chopped
  • 0.25 cup Parmesan cheese grated

Instructions

  • Wash and chop all vegetables, prepare spices and set aside.
  • Heat oil in a large skillet and brown the ground turkey with salt, pepper, cumin, and paprika.
  • Remove turkey; in the same skillet, sauté onion, garlic, red pepper, then zucchini.
  • Add cherry tomatoes and oregano. Stir in turkey. Heat through.
  • Stir in optional corn and beans, top with basil and Parmesan.
