Ingredients

Base Ingredients

  • 3 very ripe bananas brown-spotted for maximum sweetness
  • 1 cup plain Greek yogurt full-fat works best
  • 2 eggs room temperature
  • cup maple syrup or honey
  • 1 teaspoon vanilla extract pure vanilla preferred

Dry Ingredients

  • 1 ¾ cups all-purpose flour or oat flour for GF
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon cinnamon
  • ¼ teaspoon nutmeg optional

Optional Add-ins

  • ½ cup chocolate chips dark chocolate preferred
  • ½ cup chopped walnuts
  • 2 tablespoon rolled oats rustic topping

Instructions

  • Oven 350°F (175°C), pan ready
  • Mash – Bananas until mostly smooth
  • Mix Wet – Add yogurt, eggs, syrup, vanilla
  • Whisk Dry – Flour, soda, salt, spices
  • Combine – Fold wet into dry, do not overmix
  • Add-ins – Fold chips/nuts/oats if using
  • Bake – 55–65 min, test with toothpick
  • Cool – 10 min pan, then rack fully
