Ingredients

Essential Base

  • 2 lbs Boneless chicken thighs or breasts
  • 8 cups Low-sodium chicken broth Certified gluten-free
  • 2 Carrots Sliced into rounds
  • 3 Celery stalks Chopped
  • 1 Yellow onion Diced
  • 3 Garlic cloves Minced
  • 2 Bay leaves
  • 1 teaspoon Dried thyme
  • 1 teaspoon Dried parsley
  • Salt and pepper To taste

Finishing Touches

  • 8 oz Gluten-free egg noodles Or use rice noodles
  • 2 tablespoon Olive oil For sautéing
  • 1 tablespoon Lemon juice Fresh
  • 2 tablespoon Fresh parsley Chopped
  • 1 teaspoon Turmeric Optional, for color

Instructions

  • Sear chicken and sauté vegetables in pot.
  • Add broth, herbs, and simmer with chicken.
  • Shred chicken and strain broth.
  • Boil noodles separately in salted water.
