Ingredients

  • 1.5 lbs boneless chicken thighs cut into bite-sized pieces
  • 1.5 lbs baby potatoes halved or quartered
  • 3 tablespoon unsalted butter divided
  • 2 tablespoon olive oil for searing
  • 6 cloves garlic minced
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme or use fresh if available
  • ½ teaspoon salt or to taste
  • ½ teaspoon black pepper
  • 1 tablespoon fresh parsley chopped, for garnish

Instructions

  • Bring chicken to room temperature
  • Heat oil in skillet over medium heat
  • Sear chicken pieces until browned
  • Remove chicken and set aside
  • Add potatoes and cook until crispy
  • Return chicken to skillet
  • Add butter and garlic, sauté 2 mins
  • Sprinkle with herbs and stir well
  • Garnish with fresh parsley
