Ingredients

  • 12 oz pasta (penne or rigatoni)
  • 4 large yellow onions thinly sliced
  • 4 tablespoon butter
  • 2 tablespoon olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Flavor Building Ingredients

  • 3 cloves garlic minced
  • ½ cup dry white wine
  • 2 cups beef broth
  • 1 cup heavy cream
  • 2 tablespoon fresh thyme leaves

Cheese & Finishing Touches

  • 2 tablespoon fresh parsley chopped

Instructions

  • Slowly cook onions in butter and oil until golden brown.
  • Stir in garlic until fragrant.
  • Pour in wine and scrape up browned bits to deglaze the pan.
  • Add beef broth and thyme, simmer to reduce slightly.
  • Boil pasta in salted water until al dente.
  • Add cream to onion mixture, simmer, then melt in Gruyère and Parmesan.
  • Toss cooked pasta into sauce, adjust consistency with reserved pasta water if needed.
  • Top with chopped parsley and extra cheese before serving.
