Instructions
Heat skillet over medium-low and lightly grease.
Whisk cottage cheese, eggs, vanilla, and honey.
Stir in almond flour, baking powder, and salt.
Let batter sit for 5 minutes.
Pour batter into pan (¼ cup each) and cook 3–4 mins.
Flip gently once edges are set and golden underneath.
Cook 2–3 mins more until golden and firm.
Plate warm and serve with toppings of choice.
