Ingredients

  • ½ teaspoon Baking powder For fluffiness
  • 1 pinch Salt To balance flavor
  • 1 teaspoon Honey Optional, or use maple syrup

Instructions

  • Heat skillet over medium-low and lightly grease.
  • Whisk cottage cheese, eggs, vanilla, and honey.
  • Stir in almond flour, baking powder, and salt.
  • Let batter sit for 5 minutes.
  • Pour batter into pan (¼ cup each) and cook 3–4 mins.
  • Flip gently once edges are set and golden underneath.
  • Cook 2–3 mins more until golden and firm.
  • Plate warm and serve with toppings of choice.
