  • 6 large Eggs
  • 2 cups Baby spinach chopped
  • 0.5 cup Cheddar cheese shredded
  • 0.25 cup Milk any type works
  • 0.25 cup Bell peppers diced
  • 2 tablespoon Onion diced
  • 0.5 teaspoon Garlic powder
  • 0.25 teaspoon Black pepper
  • 0.25 teaspoon Salt

Instructions

  • Preheat oven to 350°F (175°C).
  • Whisk together eggs, milk, garlic powder, salt, and pepper in a mixing bowl.
  • Add chopped spinach, bell peppers, onion, and shredded cheese to the egg mixture. Stir to combine.
  • Lightly grease or line a 12-cup muffin tin. Fill each cup about ¾ full with the mixture.
  • Bake for 20–25 minutes, or until set and lightly golden.
  • Let cool for 5 minutes before serving or storing.
