Ingredients

Main Pancake Batter

  • 4 large eggs room temperature
  • 1 cup whole milk
  • 1 cup all-purpose flour sifted
  • 2 tablespoon granulated sugar
  • ½ teaspoon vanilla extract
  • ¼ teaspoon salt
  • 3 tablespoon butter for the skillet

Apple Topping

  • 3 Granny Smith apples peeled and thinly sliced
  • 2 tablespoon butter for caramelizing
  • ¼ cup brown sugar
  • 1 teaspoon ground cinnamon
  • teaspoon nutmeg optional
  • salt pinch

Instructions

  • Preheat oven to 425°F
  • Whisk eggs, milk, and vanilla
  • Mix in flour, sugar, and salt
  • Let the batter rest for 5 mins
  • Caramelize apples in butter & sugar
  • Remove skillet from oven
  • Add butter and pour in the batter
  • Add apples on top of the batter
  • Bake for 18–22 mins until puffed
  • Serve immediately while hot
