Ingredients

Soup Base

  • 6 large yellow onions thinly sliced
  • 4 tablespoon butter
  • 2 tablespoon olive oil
  • 1 teaspoon sugar for caramelization
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 6 cups beef broth low sodium preferred
  • 0.5 cup dry white wine optional
  • 2 bay leaves
  • 1 teaspoon fresh thyme or ½ teaspoon dried thyme

Topping

  • 6 slices French bread or baguette
  • 1.5 cups Gruyere cheese grated
  • 0.5 cup Parmesan cheese grated

Instructions

  • Melt cheese until bubbly and golden.
  • Caramelize – Cook onions with butter and oil until golden.
  • Transfer – Move onions to crock pot.
  • Add broth – Stir in broth, wine, thyme, bay leaves.
  • Slow cook – Cover and cook on LOW 6 hrs (or HIGH 3 hrs).
  • Toast bread – Prepare baguette slices until golden.
  • Top soup – Ladle soup into bowls, add bread and cheese.
  • Broil – Melt cheese until bubbly and golden.
