Ingredients

For the Crepe Batter

  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 ¼ cups whole milk
  • 2 tablespoon melted butter
  • ½ teaspoon salt
  • 1 tablespoon sugar

For the Chicken Filling

  • 2 cups cooked chicken shredded
  • 8 oz mushrooms sliced
  • 1 medium onion diced
  • 1 cup shredded cheese Gruyere or cheddar
  • 2 tablespoon olive oil
  • 2 cloves garlic minced
  • ½ cup heavy cream
  • 2 tablespoon fresh herbs parsley or chives
  • salt and pepper to taste

Instructions

  • Whisk flour, eggs, milk, butter, salt, sugar. Rest 30 min
  • Filling – Sauté onion, mushrooms, garlic. Add chicken, cream, season.
  • Crepes – Cook thin crepes in skillet, golden on both sides.
  • Assemble – Fill crepes, add cheese, fold, bake 10 min until melted.
