Ingredients

For the Crepe Batter

  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 ¼ cups whole milk
  • 2 tablespoon melted butter
  • 1 tablespoon granulated sugar
  • ¼ teaspoon salt
  • 1 teaspoon vanilla extract

For the Creamy Strawberry Filling

  • 8 oz cream cheese softened
  • ½ cup heavy whipping cream
  • cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 cups fresh strawberries sliced
  • 2 tablespoon strawberry jam

For Garnish

  • powdered sugar for dusting
  • fresh mint leaves optional
  • additional sliced strawberries

Instructions

  • Whisk flour, sugar, and salt. Add eggs, milk, butter, and vanilla. Chill batter 30 minutes.
  • Filling – Beat cream cheese with powdered sugar, then whip in cream and vanilla. Fold in strawberry jam.
  • Cook – Heat pan, pour batter, swirl to coat. Cook until edges curl, flip, cook briefly.
  • Assemble – Spread cream on crepe, add strawberries, fold or roll, garnish with powdered sugar and mint.
