Ingredients

  • 8 oz Pasta ( penne, fusilli, farfalle ) The hearty base of the dish

  • 2 tablespoon Olive oil Adds richness

  • 2 tablespoon Butter Creates a silky base for the sauce
  • 2 tablespoon All-purpose flour Thickens the sauce
  • 1 ½ cups Milk Forms the creamy base
  • ½ cup Heavy cream Adds richness

  • ½ cup Cheddar cheese shredded Adds sharper cheese flavor

Instructions

  • Bring salted water to a boil, cook pasta until al dente, and add broccoli in the last few minutes. Reserve pasta water before draining.
  • Sauté garlic in olive oil, add butter and flour, then slowly pour in milk and cream. Stir in the cheeses and simmer until thickened.
  • Add the cooked pasta and broccoli to the sauce and toss to coat. Add reserved pasta water if needed to adjust the sauce consistency.
  • Serve the pasta with extra Parmesan, fresh herbs, and a sprinkle of lemon zest if desired.
