Ingredients

For the Cookies

  • cups All-purpose flour For cookie structure
  • 1 cup Unsalted butter Softened
  • 1 cup Granulated sugar
  • 1 Egg Room temperature
  • 1 cup Sweetened shredded coconut Adds flavor and texture
  • 2 tablespoon Fresh lime zest About 2–3 limes
  • 3 tablespoon Fresh lime juice
  • 1 teaspoon Vanilla extract
  • ½ teaspoon Baking powder
  • ¼ teaspoon Salt

Optional Lime Glaze

  • 1 cup Powdered sugar
  • 2 tablespoon Fresh lime juice For glaze consistency
  • 1 teaspoon Lime zest Optional for extra punch
  • 1–2 drops Green food coloring Optional for visual appeal

Instructions

  • Bring butter to room temp; zest limes; measure and prep all ingredients.
  • Cream butter & sugar; add wet ingredients; mix in dry ingredients and coconut.
  • Chill dough for 30 minutes.
  • Scoop, flatten, and bake at 350°F for 10–12 minutes.
  • Let cookies rest on baking sheet 5 mins, then transfer to a rack.
  • Mix powdered sugar, lime juice, zest, and food coloring.
  • Drizzle or spread glaze on cooled cookies; let set 30 mins.
