Instructions
Bring butter to room temp; zest limes; measure and prep all ingredients.
Cream butter & sugar; add wet ingredients; mix in dry ingredients and coconut.
Chill dough for 30 minutes.
Scoop, flatten, and bake at 350°F for 10–12 minutes.
Let cookies rest on baking sheet 5 mins, then transfer to a rack.
Mix powdered sugar, lime juice, zest, and food coloring.
Drizzle or spread glaze on cooled cookies; let set 30 mins.
