Equipment

  • 1 Medium heatproof bowl
  • 1 Small saucepan
  • 1 Rubber spatula
  • 1 Small cookie scoop or melon baller (about 1-inch size)
  • Parchment paper
  • 1 Baking sheet
  • 1 Food thermometer (optional but helpful)

Ingredients

  • 8 oz (225g) high-quality dark chocolate, finely chopped
  • ½ cup (120ml) heavy cream
  • 2 tablespoons (30g) unsalted butter, room temperature
  • ¼ tablespoons pure vanilla extract
  • Pinch of sea salt
  • For coating: cocoa powder, crushed nuts, or shredded coconut

Instructions

Chop Chocolate

  • Finely chop chocolate and place in heatproof bowl

Heat Cream

  • Heat heavy cream until just simmering
  • Pour over chocolate
  • Let stand 1 minute

Make Ganache

  • Stir until smooth
  • Add butter and vanilla
  • Mix until incorporated
  • Add salt

Chill

  • Cover with plastic wrap
  • Refrigerate 2-3 hours

Shape

  • Scoop 1-inch balls
  • Roll between palms
  • Place on lined baking sheet

Coat

  • Roll in desired coating
  • Chill until firm

Notes

  • Use high-quality chocolate (60-70% cocoa)
  • Keep hands cold when rolling
  • Bring to room temperature before serving
