Instructions
Preheat oven to 350°F and line pan with parchment paper.
Melt butter and chocolate, whisk in sugar and eggs, then fold in flour, cacao, and salt.
Bake brownie base for 25–28 minutes until a toothpick shows moist crumbs. Cool completely.
Melt chocolate for mousse, then mix with yolks, sucre glace, and vanilla extract.
Whip cream and egg whites separately until stiff; fold both into chocolate mixture.
Spread mousse over the cooled brownie base using an offset spatula.
Refrigerate for at least 3 hours or overnight. Cut into squares and serve.
