Ingredients

  • 1 cup Unsalted butter
  • 8 oz Dark chocolate chopped, 70% cocoa
  • 1 cup Granulated sugar
  • 3 large Eggs
  • ½ cup All-purpose flour
  • ¼ cup Cacao en poudre
  • ½ teaspoon Salt
  • 6 oz Dark chocolate finely chopped
  • 3 large Eggs, separated yolks for richness, whites for airiness
  • ¼ cup Sucre glace
  • 1 cup Heavy cream
  • 1 teaspoon Vanilla extract
  • 1 pinch Salt

Instructions

  • Preheat oven to 350°F and line pan with parchment paper.
  • Melt butter and chocolate, whisk in sugar and eggs, then fold in flour, cacao, and salt.
  • Bake brownie base for 25–28 minutes until a toothpick shows moist crumbs. Cool completely.
  • Melt chocolate for mousse, then mix with yolks, sucre glace, and vanilla extract.
  • Whip cream and egg whites separately until stiff; fold both into chocolate mixture.
  • Spread mousse over the cooled brownie base using an offset spatula.
  • Refrigerate for at least 3 hours or overnight. Cut into squares and serve.
