  • 3 cups cooked jasmine rice preferably day-old
  • 3 large eggs lightly beaten
  • 3 tablespoon vegetable oil divided
  • 2 tablespoon soy sauce
  • 1 teaspoon sesame oil finishing touch
  • 3 spring onions whites and greens separated
  • 2 cloves garlic minced
  • 1 teaspoon fresh ginger grated
  • salt and white pepper to taste
  • 1 cup frozen peas and carrots optional

Instructions

  • Break up rice and prep ingredients.
  • Cook eggs in wok, remove and set aside.
  • Stir fry aromatics until fragrant.
  • Add rice, toss over high heat.
  • Add veggies and combine.
  • Return eggs, season with soy & sesame oil.
  • Finish with spring onions, serve hot.
