Ingredients

Main Salad

  • 2 cans Chickpeas 15 oz each, drained & rinsed
  • 2 Avocados diced into chunks
  • 6 oz Feta cheese crumbled
  • 1 Red onion thinly sliced
  • 1 Cucumber diced
  • 0.5 cup Fresh parsley chopped
  • 0.25 cup Fresh cilantro chopped (optional)

Lemon Vinaigrette Dressing

  • 0.25 cup Olive oil extra virgin
  • 3 tablespoon Lemon juice fresh
  • 1 tablespoon Lemon zest
  • 1 clove Garlic minced
  • 1 teaspoon Dried oregano
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Optional Add-ins

  • 0.5 cup Cherry tomatoes halved
  • 0.25 cup Kalamata olives pitted/sliced
  • 2 tablespoon Pine nuts or sunflower seeds

Instructions

  • Drain chickpeas, dice avocado, slice onion, and crumble feta.
  • Whisk olive oil, lemon juice, zest, garlic, oregano, salt & pepper.
  • Let chickpeas sit in half the dressing for 15 minutes.
  • Combine chickpeas, avocado, feta, onion, cucumber, and herbs.
  • Pour remaining vinaigrette over salad and toss gently.
  • Rest for 10 minutes, adjust seasoning, and serve fresh.
