Ingredients

For the Chicken

  • 2 boneless, skinless chicken breasts

  • 1 teaspoon dried oregano
  • salt and black pepper to taste

For the Caesar Dressing

  • ½ cup mayonnaise
  • 2 tablespoons grated parmesan cheese
  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Worcestershire sauce
  • ½ teaspoon anchovy paste optional but recommended
  • 2 cloves garlic minced
  • black pepper freshly ground, to taste

For Assembly

  • 4 slices sandwich bread sourdough or ciabatta
  • 2 cups romaine lettuce chopped
  • ½ cup parmesan cheese grated
  • ½ cup garlic croutons crushed, optional
  • 2 tablespoons butter for toasting

Instructions

  • Season and cook the chicken until golden and cooked through.
  • Mix all Caesar dressing ingredients in a small bowl.
  • Toast the buttered bread slices in a skillet until crisp.
  • Spread dressing, then layer lettuce, sliced chicken, and parmesan on bread.
  • Top with second slice, cut sandwich, and serve.
