Ingredients

  • 8 oz Bowtie Pasta Or penne, cooked al dente
  • 2 cups Cooked Chicken Breast Diced or shredded
  • 4 cups Romaine Lettuce Chopped
  • 1 cup Cherry Tomatoes Halved
  • ½ cup Parmesan Cheese Freshly grated
  • 1 cup Garlic Croutons Store-bought or homemade
  • 2 tablespoon Fresh Parsley Chopped , optional
  • ½ cup Mayonnaise For dressing
  • 3 tablespoon Extra Virgin Olive Oil For dressing
  • 2 tablespoon Lemon Juice Freshly squeezed
  • 1 tablespoon Dijon Mustard For dressing
  • 2 cloves Garlic Minced
  • 1 teaspoon Anchovy Paste for authentic flavor, Optional
  • ½ teaspoon Worcestershire Sauce Enhances umami flavor
  • ½ cup Parmesan Cheese Finely grated for dressing
  • ¼ teaspoon Salt To taste
  • ½ teaspoon Black Pepper Cracked ,to taste

Instructions

  • Boil salted water, cook pasta until al dente, drain, and let cool.
  • Season and cook chicken until golden brown, then dice into bite-sized pieces.
  • Whisk together mayonnaise, olive oil, lemon juice, Dijon mustard, garlic, anchovy paste, Worcestershire sauce, and parmesan to make dressing.
  • In a large bowl, combine pasta, chicken, romaine, and cherry tomatoes. Toss with dressing
  • Add grated parmesan and gently toss again.
  • Just before serving, top with croutons and more dressing if needed.
