  • 1 Thin spatula
  • 1 Cookie cutter or drinking glass (2–3" round)
  • 2 Small bowls (for eggs)
  • 1 Lid (to cover skillet)

Ingredients

  • 2 slices Thick bread Sourdough, brioche, or whole wheat
  • 2 Eggs Room temperature, large
  • 0.5 cup Shredded cheese Cheddar, gruyere, or mozzarella
  • 2 tablespoon Butter Or olive oil for dairy-free
  • Salt & black pepper To taste
  • tablespoon Chives or green onions Optional – chopped
  • 0.25 teaspoon Garlic powder Optional
  • pinch Paprika Optional – for color
  • Hot sauce Optional – for serving

Instructions

  • Cut a round in the center of each bread slice with a cookie cutter or glass. Heat skillet over medium and melt butter.
  • Toast bread in butter until golden on one side.
  • Flip slices and crack eggs into the cut-outs.
  • Sprinkle cheese around the egg and over whites.
  • Cover skillet with lid and cook until whites are set and cheese melts.
  • Garnish with chives, season, and serve hot with hot sauce if desired.
