Ingredients

Base

  • 1 large head cauliflower (or 4 cups riced)
  • 2 tablespoons sesame oil, divided
  • 2 eggs, beaten
  • 1 cup frozen peas and carrots
  • 1 medium onion, diced
  • 3 cloves garlic, minced

Sauce

  • 3 tablespoons low-sodium soy sauce
  • 1 teaspoon oyster sauce (optional)
  • ½ teaspoon white pepper
  • Salt to taste

Garnish

  • 2 green onions, sliced
  • 1 tablespoon sesame seeds

Instructions

Prep Cauliflower

  • Rice cauliflower in food processor
  • Pat dry with paper towels

Cook Eggs

  • Heat 1 tablespoon oil
  • Scramble eggs until just set
  • Remove and set aside

Sauté Vegetables

  • Add remaining oil
  • Cook onions (2-3 minutes)
  • Add garlic and ginger (30 seconds)
  • Add peas and carrots

Finish Dish

  • Add cauliflower rice
  • Stir-fry 5-7 minutes
  • Add sauces and seasonings
  • Mix in eggs
  • Top with garnishes
