- 2 cups rolled oats
- 1 cup finely grated carrots
- 1 cup Medjool dates pitted
- ½ cup walnuts
- ¼ cup shredded coconut
- 2 tablespoon ground flaxseed
- 1 teaspoon vanilla extract
- 1 teaspoon cinnamon
- ¼ teaspoon nutmeg
- ¼ teaspoon ginger
- Pinch of salt
Process oats and nuts until finely ground
Add dates and process into paste
Mix in carrots and spices
Form into 12 balls
Roll in coconut if desired
Refrigerate for 30 minutes
