Ingredients

For the Simple Base

  • 2 cups graham cracker crumbs
  • cup melted butter
  • ¼ cup granulated sugar

For the Apple Cheesecake Filling

  • 16 oz cream cheese softened
  • ½ cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 medium apples peeled and diced small
  • 1 teaspoon cinnamon
  • ¼ cup caramel sauce plus extra for drizzling

Instructions

  • Mix graham cracker crumbs, melted butter, and sugar. Press into baking dish lined with parchment paper. Bake for 8 minutes at 350°F (175°C).
  • In a bowl, beat cream cheese and sugar until smooth. Add eggs and vanilla; mix well.
  • Fold in diced apples, cinnamon, and caramel sauce. Pour mixture over the baked crust and spread evenly.
  • Bake for 25–30 minutes until center is almost set. Cool to room temperature.
  • Refrigerate for at least 2 hours until firm.
  • Drizzle with additional caramel sauce before serving. Cut into 12 bars.
