Ingredients

  • 1 pound Andouille sausage sliced into rounds
  • 1 tablespoon Olive oil for sautéing
  • 1 medium Onion diced
  • 1 whole Green bell pepper diced
  • 1 whole Red bell pepper diced
  • 2 stalks Celery diced
  • 3–4 cloves Garlic minced
  • 2 tablespoons Cajun seasoning adjust to taste
  • cups Long-grain rice uncooked
  • 3 cups Chicken broth can substitute with vegetable broth
  • 1 can Diced tomatoes with juice
  • 2 leaves Bay leaves optional
  • 2 whole Green onions sliced for garnish
  • to taste Fresh parsley chopped, for garnish

Instructions

  • Brown the sausage in olive oil
  • Sauté onions, peppers, and celery
  • Stir in garlic and Cajun seasoning
  • Add rice, broth, tomatoes, bay leaves
  • Return sausage to pan and simmer
  • Let rest and garnish before serving
