Ingredients

  • 2 cups All-purpose flour Provides structure
  • ¼ cup Granulated sugar Adds light sweetness

Instructions

  • Combine dry ingredients in one bowl and wet in another. Mix until just combined, then fold in mix-ins.
  • Scoop batter into a greased mini muffin tin, filling each cavity about ¾ full.
  • Bake at 375°F for 12–15 minutes until golden brown and a toothpick comes out clean.
  • Let pancake poppers rest in the pan for 5 minutes before removing.
  • Serve warm with maple syrup, powdered sugar, or your favorite toppings.
