Ingredients

  • 0.25 cup Fresh cilantro optional, roughly chopped
  • 3 tablespoon Rice vinegar
  • 1 tablespoon Soy sauce or tamari for gluten-free option
  • 2 teaspoon Sugar or honey for natural sweetener
  • 1-2 tablespoon Chili oil adjust to heat preference
  • 1 tablespoon Sesame oil
  • 2 Garlic cloves minced
  • 1 teaspoon Fresh ginger grated
  • 1-2 teaspoon Red pepper flakes or Korean gochugaru

Instructions

  • Slice cucumbers, salt them, and drain.
  • Make the spicy dressing.
  • Rinse and dry cucumbers.
  • Toss cucumbers with dressing and green onions.
  • Chill for 10 minutes before serving.
  • Garnish with sesame seeds and cilantro.
