Ingredients

  • 2 ripe avocados mashed until smooth
  • 3 large eggs room temperature
  • ½ cups oat flour homemade or store-bought

Instructions

  • Preheat oven to 350°F and grease a loaf pan.
  • In a bowl, mash avocados, then mix in eggs.
  • Add oat flour and stir until just combined.
  • Let the batter rest for 10 minutes.
  • Pour into pan and smooth the top.
  • Bake for 45–50 minutes, until golden and firm.
  • Cool in pan 10 minutes, then on wire rack.
  • Slice and serve warm or at room temp.
