Main Ingredients:
- 8 Large flour tortillas (10-inch)
- 12 Large eggs
- 1 pound breakfast sausage
- 2 cups shredded cheddar cheese
- 1 Large red bell pepper, diced
- 1 medium onion, diced
- 2 tablespoons butter or olive oil
- 2 cloves cloves garlic, minced
- 1 tablespoon tablespoon taco seasoning
- Salt and pepper to taste

Prep Work (15 minutes)
Dice the onion and bell pepper
Beat the eggs in a large bowl with ¼ cup milk and a pinch of salt and pepper
Warm the tortillas slightly to make them more pliable
Cook the Filling (25 minutes)
Brown the sausage in a large skillet over medium heat, breaking it into crumbles (8-10 minutes)
Remove the sausage and set aside, leaving some drippings in the pan
Add butter to the pan and sauté the onions and peppers until softened (5-6 minutes)
Add minced garlic and cook until fragrant (30 seconds)
Pour in the beaten eggs and cook, stirring gently, until just set but still slightly glossy
Stir in the cooked sausage and taco seasoning
Remove from heat and stir in the shredded cheese
Assembly (20 minutes)
Lay out a tortilla and place about ¾ cup of the filling slightly below center
Fold the bottom edge up and over the filling
Fold in both sides
Roll up tightly from the bottom, tucking in the sides as you go
Wrap in parchment paper if freezing
- Cool filling before wrapping
- Don't overfill tortillas
- Warm tortillas for easier rolling
- Let frozen burritos thaw overnight
