Ingredients

Main Ingredients:

  • 8 large flour tortillas (10-inch)
  • 12 large eggs
  • 1 pound breakfast sausage
  • 2 cups shredded cheddar cheese
  • 1 large red bell pepper, diced
  • 1 medium onion, diced
  • 2 tablespoons butter or olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon taco seasoning
  • Salt and pepper to taste

Instructions

Prep Work (15 minutes)

  • Dice the onion and bell pepper
  • Beat the eggs in a large bowl with ¼ cup milk and a pinch of salt and pepper
  • Warm the tortillas slightly to make them more pliable

Cook the Filling (25 minutes)

  • Brown the sausage in a large skillet over medium heat, breaking it into crumbles (8-10 minutes)
  • Remove the sausage and set aside, leaving some drippings in the pan
  • Add butter to the pan and sauté the onions and peppers until softened (5-6 minutes)
  • Add minced garlic and cook until fragrant (30 seconds)
  • Pour in the beaten eggs and cook, stirring gently, until just set but still slightly glossy
  • Stir in the cooked sausage and taco seasoning
  • Remove from heat and stir in the shredded cheese

Assembly (20 minutes)

  • Lay out a tortilla and place about ¾ cup of the filling slightly below center
  • Fold the bottom edge up and over the filling
  • Fold in both sides
  • Roll up tightly from the bottom, tucking in the sides as you go
  • Wrap in parchment paper if freezing

Notes

  • Cool filling before wrapping
  • Don't overfill tortillas
  • Warm tortillas for easier rolling
  • Let frozen burritos thaw overnight
