Ingredients

  • 3 tablespoon granulated sugar

For the Mascarpone Filling:

  • 16 oz mascarpone room temperature
  • cups heavy cream cold
  • cup powdered sugar
  • 2 teaspoon vanilla extract

For the Topping:

  • 3 tablespoon unsweetened cocoa for dusting
  • chocolate shavings or coffee beans optional

Instructions

  • Preheat, mix batter, and bake sponge layers
  • Make the coffee soak and mascarpone filling.
  • Slice layers, soak, spread cream, and stack.
  • Refrigerate at least 4 hours or overnight.
  • Dust with cocoa, decorate, and slice to serve.
